Armament Day apparently celebrates the Colonial Military. It may have been some sort of air show to entertain civilians, perhaps the celebration of remembering heroes of the Colonial Military.
Apollo sarcastically comments that the closest that the female shuttle pilots have ever been to a Viper is on this day (Lost Planet of the Gods, Part I).
